Traditional Sweet of Weddings and Celebrations in Santorini:
For this sweet treat for weddings and celebrations, which is made on many Cycladic islands, it is preferable to blanched the almonds ourselves rather than buying ready-made blanched ones, which have lost some of their deliciousness.
Koufeto is our traditional wedding dessert, but also for all occasions, such as Baptisms, Engagements or New Year’s. Traditionally, we serve it on a shallow platter and hand out small forks to the guests, so that each person gets a Sweet bite!

Ingredients
Servings: 20
- 500 g. almonds with skin, raw, unsalted
- 1 kg of Honey of your choice
- 1 tbsp. water (or cognac)
Method
To make this Sweet, start by boiling plenty of water in a medium saucepan and, once it boils, add the almonds and boil them for 5-6 minutes.
Drain them and, when they have cooled down a bit, press them one by one with your fingers to peel them – the skin from the almonds is easily removed.
With a small sharp knife, cut them in half lengthwise, to separate them into their two lobes.
Dry them very well on towels and pour them into a large and deep non-stick pan, along with 250 gr. of Honey.
Heat over medium heat, stirring constantly with a wooden spoon, for 4-5 minutes, until the honey takes on a deep caramel color and sets somewhat, like caramel.
Add the water (or cognac), carefully because it will splash, and mix.
Remove from heat, add all the remaining honey and mix very well.
Divide into small bowls or pour the confection onto a large platter to serve each Guest.
